Opening a second dining room without slowing the kitchen down.
“Thrivewell felt like a partner, not a bank. They understood that a restaurant doesn’t earn evenly and built the funding around it.”
Trattoria Verde had a reservation book full weeks out and a patio it couldn’t expand. Sofia had the lease on the unit next door, but a build-out always runs past the quote — a second prep line, more seating, a bigger walk-in — and the cash kept getting pulled into the renovation before opening week.
Thrivewell placed $110,000 in working capital in a few business days, so Sofia could finish the expansion, stock the larger kitchen and staff a second service without draining the registers that were already keeping the lights on.
“The first call, they asked about the restaurant before they asked about the numbers,” Sofia says. “They got that we earn in waves and built around it instead of against it.”
The expanded room opened on schedule, covers are up forty percent on weekends, and Sofia has since added a private-events menu to fill the quieter weeknights.
